This fruity overnight oats recipe makes a great super easy breakfast idea for the whole family - prepare the night before for an instant healthy breakfast!
Recently I shared my delicious yogurt baked oats recipe, and today I have another gorgeously simple oat based breakfast recipe for you - fruity overnight oats.
This healthy breakfast idea couldn't be easier to make - all it requires is a bit of organisation on your part the night before. If you remember to take a minute to soak your oats in the evening, you'll have an instant healthy breakfast waiting for you in the morning! It takes no longer to prepare than a bowl of cereal but is packed full of nutrients and other good things to set you up for the day.
This is another simple recipe to teach your children too - there's no cooking required, just a bit of mixing and grating, something even the smallest child can help with! Get them excited about their breakfast by learning to prepare it themselves - they'll have gained more valuable life skills and an easy recipe formula to remember through life.
I've used mixed berries in this recipe, but you can use any frozen or fresh fruit you like - it's great to mix it up by using blueberries, strawberries, or even something exotic likemango or chopped peaches - this recipe isendlessly customisable.
Fruity Overnight Oats
Ingredients:
- 40g rolled oats
- 75ml water
- 50g frozen berries
- drizzle of maple syrup or honey (optional)
To Serve:
- ½ apple
- 100g vanilla yogurt or dairy free equivalent*
- small handful fresh or frozen berries
Method:
The night before you need them, place the oats and water in a large cereal bowl and stir to combine. Top with the frozen berries and a drizzle of maple syrup or honey (if wanted). Cover and place in the fridge to soakovernight.
When ready to eat, grate the apple and stir it into the bowl with ¾ of the vanilla yogurt.
Mix well to combine, then serve with the rest of the yogurt and a small handful of berries on top.
That's it, isn't it simple!
NOTES: *To make this recipe dairy free, substitue the vanilla yogurt for a dairy free version - soya or coconut yogurts work well.
You can also make this recipe gluten free by using gluten free oats.
As well as changing the fruit used, you can also change the yogurt favour - have fun with it and experiment with different combinations to keep breakfast interesting!
