I am absolutely obsessed with my pork pineapple tacos! Every bite is a party in your mouth, thanks to the zingy salsa verde, sweet freshness of the pineapple, and creaminess of the cheese. Don’t even get me started on the ground pork. Seasoned to perfection, this pork ground taco is melt-in-your-mouth good!

What really sets these tacos apart HAS to be the pork taco toppings. Using pineapple is such a simple way to elevate your pork tacos and take them from delicious to out-of-this-world amazing! The juicy pineapple pairs perfectly with the savory pork, and the combination is something you’ll crave again and again.

  • Simple yet delicious: My pork tacos are super easy to make, yet they’re everything you could possibly want from ground pork tacos. Zingy and fresh: Salsa verde is literally one of the best shortcut ingredients out there, and it gives these tacos a bright flavor with minimal effort.
  • You can make it in bulk!: This recipe is perfect for big gatherings or meal prep. Double (or triple!) the ingredients and refrigerate the leftovers in an airtight container for up to 4 days. By doing this, you’ll have quick and easy leftovers for simple weekday meals.
  • Use soft or fried tortillas: This is probably the most challenging part of this entire recipe: choosing if you want to use soft flour or crunchy fried corn shells! Both compliment my pork and pineapple tacos beautifully, but if you’re not sure which you’d prefer, we compare the two tortillas below.

Ingredients for Pork Pineapple Tacos:

For the Ground Pork Tacos

  • Canola oil
  • Ground pork
  • Garlic cloves
  • Cumin
  • Salsa verde
  • Honey
  • Salt

For Serving

  • Pineapple, canned or fresh
  • White onion
  • Fresh cilantro
  • Queso Fresco or Monterey Jack cheese
  • Tortillas, corn, or flour, see note

Instructions for Ground Pork Tacos

  1. In a medium skillet, heat oil until simmering.
  2. Add the pork and cook until browned.
  3. Add garlic and cumin and cook until fragrant, about 30 seconds.
  4. Add the salsa verde, honey, and salt and simmer for 3-5 minutes or until most of the liquid has evaporated.
  5. Serve on tortillas of your choice or fry into tacos.
  6. For fried tacos, heat oil in a large skillet and warm your tortillas in the microwave for around 30 seconds. Put 2-3 tablespoons of the taco filling into the tortilla (be careful not to overfill!) Fold the tortillas in half and place into the hot oil, holding in place with tongs to start. Flip them over once golden brown, and then when done, place them on a plate lined with a paper towel to absorb any extra oil.
  7. Top with your desired toppings and enjoy!

Flour or corn tortillas?

If you’re wanting a more quick and easy option, soft flour tortillas are definitely the way to go. But when making deep fried tacos, I prefer to use corn tortillas as they keep their shape well. Fried corn tortillas are a bit more work, but they’re worth it if you’re looking for that authentic taqueria experience. Plus, they’re extra crispy and hold up well when loaded with toppings.

Either way, you really can’t go wrong. So choose your favorite and enjoy!
